I have a friend named Anjali. I think it’s a good name, but it sadly always gets mispronounced. She pronounces her name Ahn-Juh-Lee, but most people pronounce it Anh-Jal-Ee the first time they say it and she always has to correct them.

This is my own name and I absolutely love it! It's so beautiful, elegant, and sweet-sounding- but not to the point of sounding overly sugary or frilly- and not very common (at least in my own experience). However, if you decide to name your kid this, please keep in mind that non-Indians will constantly butcher and mutilate her name's spelling, on the basis that they assume it's some weird form of Angel or Angie.
Also, I don't understand why I see some people whining about the pronunciation of this name, both on this site and on others. I'm Indian myself (Indo-Caribbean to be exact) and both my family and I pronounce it as "AHN-juh-lee," stressing the first "a."
