I personally love this name and I find it very pretty and saccharine. The unique spelling feels fresh and peppy but at the same time excessively "different". I do prefer this spelling more than the traditional "Amy" as it feels more visually appealing and less generic. A friend of mine is named Aimee and they are very sweet and Aimee-able (sorry) so that may be some sort of personal bias.
Overall I believe "Aimee" is a lovely name. It feels very sweet and fresh and is a good alternative to the commonly used "Amy."

I think Amy is a not interesting, bland name. But this spelling kind of makes it better.
